Updated Pizza Dough Recipe

 So the last time that I've posted anything here was 7 years ago! A lot has happened since, obviously.


So I've started using this recipe circa 2016 when we moved to our new home. Pizza has always been something special for us. So this recipe from Gennaro Contaldo really hits the mark.


To make 4 "medium" pizzas


Ingredients are:

500g strong flour

5g salt

10g fresh yeast

325ml lukewarm water

Half a teaspoon of sugar

Some olive oil (for greasing)


I tend to add a half teaspoon of sugar just to have that beautiful slightly charred and golden color to the cooked crust.


To make the dough:

1. Dissolve the sugar and yeast in the warm water. Let it rest for about 5 minutes so you can judge whether the yeast is active or not.

2. Mix the flour and salt together.

3. Add the water, sugar, and yeast mixture. Even though the amount of water here is quite accurate, I found that it's best not to add all of the water at one go, depending on the humidity of your flour. 

4. Knead the dough until it looks quite even (for about 10 minutes or so) and transfer to an oiled bowl.

5. Cover the bowl of dough with a towel (or some plastic wrap). I like to drizzle some olive oil on my dough before leaving it to rise for about 2 hours (at least 30 minutes should do).

6. Preheat your oven on the highest heat possible.

6. Cut the dough into 4 pieces and work each one of them onto a floured surface. I tend to use a rolling pin on some or just work the dough with my hands. 

7. Sprinkle an oven pan (baking tray) with some semolina and place the dough on it. Add your favorite topping, drizzle some olive oil and let it bake for about 8 to 10 minutes.
